Jiranek Laboratory

Jiranek Lab GroupThe research of the Wine Microbiology and Microbial Biotechnology Group is aimed at understanding the metabolism and genetics of industrial microorganisms and improving their performance in the winemaking brewing and food industries.

A number of honours and postgraduate opportunities are available within this laboratory, more details of which can be found via the Prospective students section of this website.

Research Interests:

  • Role of wine yeast nitrogen and oxygen metabolism in fermentation reliability and flavour formation.
  • Regulation of sugar uptake by brewing yeasts.
  • Identification of enzymes in lactic acid bacteria for use in wine processing and flavour release.
  • Interaction of stress-response processes with fermentation performance and wine quality.
  • Optimisation of yeast (Saccharomyces cerevisiae) by recombinant and non-recombinant methods.
